1 cup uncooked rice
salt & pepper
oregano
marjoram
1/4 cup olive oil
2 Tbl. lemon juice
2 scallions sliced
1/2 Lbs. peeled & chopped shrimp
2 Tbls. chopped parsley

cook rice in salted boiling water til tender & drain
season rice with salt & pepper, oregano & marjoram
pour on the olive oil & lemon juice while still warm mix in the scallions & cool.
when cool, mix in the chopped shrimp and parsley.
