1/2 cup vegetable oil
2 med green plantains,peeled and cut crosswise in 1/2 inch thick slices.
In heavy 12 inch skillet ,heat oil over moderate heat til light haze forms above it.add plantain slices without crowding pan.brown about 2 min each side.when brown.transfer to paper towels to drain.on a board,using broad solid spatula,press each slice into flat round,about 1/4 inch thick and 2 inch diameter.heat oil and fry rounds again for about 1 min.on each side.drain on paper towels,and serve at once
