1-15 oz. can black beans, rinsed
2 ears grilled corn, kernels cut from cob (1 cup)
1 medium red bell pepper, diced small
1 medium scallion, sliced thin
1 small garlic clove, minced
1 small jalapeno or serrano pepper, seeded and minced
1 tsp cumin seed, toasted or 1 tsp ground cumin
2 TBS olive oil
2 TBS lime juice
1 TBS chopped cilantro leaves
1/8 tsp salt
4 trout cleaned
Grill the trout on med. heat till done 3 to 4 min a side
Place all ingredients in a medium bowl (not the trout)toss well and serve over the trout also good with chips or over chicken.
