First you need the Snook
For the coating you need,
1 medium yellow onion,cut in pieces.5 cloves of garlic peeled.2 tablespoons of paprika.3/4 teaspoon ground dried thyme.3/4 teaspoon of oregano.1/4 teaspoon cayenne pepper.1/4 teaspoon black pepper.1/4 teaspoon salt
1:place all of the coating ingredients in a food processor or blender and process until finely ground.
2:rinse the Snook and pat dry.rub the coating on each side of the fish set aside for ten minutes,
3:Grill the fish over medium heat covered for about 4 minutes each side or till meat is easily flaked with a fork. Garnish with lemon wedges and serve.
