2lbs. flounder fillets, 4 cups fish stock, 1/3 cup butter, 1/2lb. mushrooms (sliced) 1/4 cup flour, 1/4 cup grated Parmesan cheese, 1 cup cream, salt& pepper, cook the fish in the stock until just tender. remove & keep warm. saute the mushrooms in half the butter for five minutes. mix the other half of the butter with the flour and add to the simmering stock, stirring constantly. cook until thick. Remove from heat & stir in the cheese and the cream. season to tast with salt and pepper. place the fish on the bottom of a buttered baking dish. spread the mushrooms over the fish and pour the white sauce over it all. bake at 350 for about 20 minutes. have gotten alot of complaments on this dish enjoy
