10 firm ripe plantains
½ cup of grated cheddar cheese
2 lb. boneless fish
¼ cup of breadcrumbs mixed with 2 tablespoons of grated cheese
¼ teaspoon of brown sugar
2 tablespoons butter
¼ teaspoon of oregano
2 tablespoons oil
2 ½ tablespoons of lime juice
1 onion
1 sweet pepper
1 tomato
4 cloves of garlic
Thyme
Salt and Pepper to taste
Clean fish and season with salt, black pepper, ½ clove of garlic and two tablespoons of lime juice. Leave for a few hours or marinate overnight
Boil and mash plantains with butter, divide and put aside
Melt butter in frying pan and cook fish and put aside
Finely chop onion, sweet pepper, tomato, chive and remaining garlic and fry in oil
Add cooked fish and stir until blended.
Add salt, pepper, sugar and ½ teaspoon of lime juice and blend
Place ½ of the mashed plantain on greased dish and add fish mixture on top. Cover fish mixture with remainder of the mashed plantain. Lightly sprinkle with breadcrumbs and cheese and bake in 375-degree oven until top is browned.
Remove and serve.
