10 oz Frozen chopped spinach
1 ts Salt
1/8 ts Pepper
1/2 c Dry white wine
1/4 c Bread crumbs
6 Snapper fillets
1/2 c Finely chopped onion
2 tb Finely chopped parsley
1 c Sliced mushrooms
2 md Tomatoes; skinned and
.. quartered
2 tb Flour
1 tb Cold water
1/4 c Whipped cream
1 tb Lemon juice
Cook and drain spinach. Mix with salt, pepper, 1/3
cup wine, and bread crumbs.
Preheat oven to 500°.
Place mound of spinach on one end of fish fillet;
fold other end over filling. Place in well greased
baking pan. Add onion, parsley, and remaining
wine. Arrange mushrooms and tomatoes on top of
fish. Cover with piece of parchment paper. Bake 15
minutes. Transfer fish to ovenproof platter. Blend
flour with cold water; add to cooking liquid
remaining in baking pan. Simmer 2-3 minutes,
stirring constantly. Remove from heat, add whipped
cream and lemon juice. Pour over fish and broil
until browned.
